- 12 ounces or 2 ½ cups fresh or frozen cheese tortellini
- 12 ounces sweet Italian Sausage
- 1 green pepper, diced
- 2 ½ cups Uncle Steve’s Tomato Basil Sauce
- 8 ounces fresh mozzarella cheese
- Fresh Basil leaves
Cook tortellini in rapidly boiling salted water, 8-10 minutes, until al dente. Drain in colander.
While pasta is cooking, squeeze sausage from its casing and brown in a 12” cast iron skillet over medium high heat until cooked through, breaking it up with a wooden spoon as it cooks, about 6 minutes. The meat will no longer be pink when cooked through.
Top with cheese. Cover pan for three minutes.
Garnish with julienned basil leaves. Serve hot.
