The late weeks of summer are here and we are blessed with fresh tomatoes. You can grow them yourself if you have the room (they don’t fit into NYC apartments) or pick them up at farm stands around the country. Picking tomatoes from the vine is one of summer’s delightful pleasures and there’s nothing like the warmth of tomatoes from the vine and their earthy aroma.

We made a beautiful Ensalada Caprese, or Mozzarella and Tomatoes, for a light lunch today.  This is a dish that should be reserved for summer for it is almost impossible to get it right with a tomato that wasn’t just picked.

When you pair fresh tomatoes with creamy fresh mozzarella and fresh basil you have the perfect union of flavors and textures. A little drizzle of balsamic vinegar reduction or fruity olive oil with salt will make your taste buds dance!
