SPANISH RICE

Ingredients

Makes 4-6 servings

-2 tablespoons vegetable oil
-1 medium onion, peeled and diced
-1 green bell pepper, seeded and diced
-2 cloves garlic, minced
-1 cup Uncle Steve’s Marinara sauce
-1 cup water
-½ cup frozen peas
-1 cup long grain rice
-Kosher salt
-Freshly ground pepper

Procedure

In a 4-quart saucepan, heat oil over medium heat until shimmering. Add onion, pepper and season with a little salt and pepper. Sauté, stirring occasionally, until onion starts to brown on the edges. Add garlic and cook about 30 seconds, stirring constantly.

Add marinara sauce, water, peas, rice, one teaspoon of salt, a few grinds of pepper and bring to a boil over high heat. Give it a stir or two, lower heat to low setting and cover the pot. Cook for twenty minutes. Remove from heat and let cool for five minutes. Serve.
