-1 bulb garlic
-1 teaspoon olive oil
Pre-heat oven to 400 degrees with rack set in middle of oven. Trim off ½ inch of the top of the bulb (the papery end) to expose the cloves of garlic. Drizzle the garlic with one teaspoon olive oil. Sprinkle lightly with salt and loosely wrap in aluminum foil or place in a terracotta garlic roaster. Bake 40-50 minutes until very soft. When cool enough to handle, separate cloves and squeeze garlic right out of its skin. Each bulb will make approximately three tablespoons roasted garlic.
-1 loaf Italian bread
-½ stick unsalted butter, melted
-1/8 teaspoon salt
-2 tablespoons chopped flat-leaf parsley
-1 cup grated mozzarella cheese
-½ cup Uncle Steve’s Marinara Sauce, heated
Preheat broiler with oven rack set three inches from heat source. Slice bread horizontally. Whisk together garlic, melted butter and salt in mixing bowl. Brush garlic mixture on cut side of bread. Top with a generous amount of grated cheese. Broil 2-3 minutes until cheese is melted.Remove from oven and place on cutting board. Sprinkle with parsley. Let cool for three minutes. Slice horizontally into two inch pieces. With a large spoon drizzle warm sauce over all. Serve immediately.
