Tortellini, Sausage and Sweet Peppers

TORTELLINI AND SAUSAGE

Cook tortellini in rapidly boiling salted water, 8-10 minutes, until al dente. Drain in colander.  

While pasta is cooking, squeeze sausage from its casing and brown in a 12” cast iron skillet over medium high heat until cooked through, breaking it up with a wooden spoon as it cooks, about 6 minutes. The meat will no longer be pink when cooked through.

When meat is almost done, push to one side of the pan and add peppers to the empty side. Sauté peppers for two minutes, tossing occasionally.

Add sauce and tortellini. Stir to combine.

Top with cheese. Cover pan for three minutes.

Garnish with julienned basil leaves.  Serve hot.
